Cancan suggested in the comments to my last post that I make summer rolls. It turns out that I made them for dinner--before I read her comment!

I soaked rice paper wrappers in hot water, then added carrots to some and shrimp to others. I then put in rice noodles (which Mama had cooked earlier).



We also put in avocado,



then added basil and watercress. My Papa bought a cucumber at the farmer's market for the dinner, but I didn't know so I ate it on the way home! Next time we'll buy two cucumbers.

Then I folded them up.



Mama made a spicy peanut sauce to dip them in.



Yum! Delicious!

Next time, maybe I'll try putting the peanut butter inside and dipping them in plum sauce like Cancan suggested.

All over the world

I have been getting a lot of comments and visits because the Vegan Lunch Box linked to me!

I have gotten visitors from Brazil to Japan and from Iceland to Australia. It is so cool to have all these people come by. Do you have any suggestions of foods from where you live that I could learn to make?

Onigiri

Mama and I made onigiri for lunch. They are rice balls stuffed with tuna or salmon or something else.





I took a handful of rice and make sort of a cup shape, then I took some salmon and put it in the rice. Then I put a little more rice on top and packed it and squeezed it into a flattened ball.



This one is sprinkled with gomashio (a blend of ground sesame seeds and nori).

Then I ate the onigiri I made. YUM!

Today I got to make lunch for Papa.



I made bean and cheese quesadillas on whole-wheat tortillas. With Mama's help, I made a salad with thin slices of raw squash, some cherry tomatoes, a few blanched green beans from our garden, and some egg that I sliced in a little slicer that I think belonged to my great grandmother. On the side we packed some salsa, a few raisins, a few almonds, and two figs (one light and one dark).

books and more books

I recently learned how to put books on hold from the library. I have been enjoying the Redwall series, the Artemis Fowl series, and have just started both the Hobbit and the Ranger's Apprentice. So far they are very good!
