Onigiri

Mama and I made onigiri for lunch. They are rice balls stuffed with tuna or salmon or something else.





I took a handful of rice and make sort of a cup shape, then I took some salmon and put it in the rice. Then I put a little more rice on top and packed it and squeezed it into a flattened ball.



This one is sprinkled with gomashio (a blend of ground sesame seeds and nori).

Then I ate the onigiri I made. YUM!

I like to put umeboshi (pickled plums) into onigiri!

Too bad I neither eat salmon nor tuna, or any other form of fish. Is there anything else that can substitute it?

Absolutely! As Stephanie says above, umeboshi plum (or plum paste) is wonderful in onigiri--and very traditional, as well. Avocado is excellent--and while I haven't tried it yet, I've heard that hummus is good, that peanut butter is a smash hit, that chopped fresh tomatoes are great, etc. Red bean paste is definitely on my list to try as well. Refried beans. Sauteed mushrooms. Roasted eggplant. Steamed shredded carrot. Chopped pickles--asian or otherwise. Banana and peach. Basically: anything with any kind of flavor! (In general, you want something relatively soft as a filling.)

Hello there from Louisville, Kentucky! Onigiri is also delicious with bonito (dried fish flakes).
